Garden-Fresh Cucumber Tomato Salad with Spicy Balsamic Dressing

Prep Time: 10 minutes

Servings: 3–4

Difficulty: Easy

Ingredients

15 large cherry tomatoes, halved

2 medium cucumbers, peeled (or partially peeled) and sliced into thin half-moons

1/2 garden green pepper, diced fine

1/2 jalapeno, seeded and finely minced (adjust based on spice tolerance)

1 fresh red cayenne pepper, finely sliced (optional, for extra heat)

10–12 fresh basil leaves, sliced thin (chiffonade)

2 tbsp extra virgin olive oil

1 tbsp balsamic vinegar (substituted for red wine vinegar/lemon juice)

1/2 tsp coarse sea salt

1/2 tsp freshly cracked black pepper (to taste)

Instructions

Prep the Produce: Rinse/Wash your freshly picked vegetables. Slice the cherry tomatoes in half, cut the cucumbers into half-moons, dice the green pepper, mince the jalapeno, and finely shred the fresh basil.

Whisk the Dressing: In a small bowl, combine the olive oil, balsamic vinegar, salt, and freshly cracked black pepper. Whisk until emulsified.

NOTE: I just added the oil, vinegar, salt and pepper directly into the bowl.

Toss and Serve: Combine all prepped vegetables in a salad bowl. Pour the balsamic herb dressing over the top and toss gently to coat every piece evenly. Serve fresh or chill for 15 minutes before serving.

Blog Notes & Tips for Readers

Heat Warning: Tailor the spicy elements to your guests’ preferences. If serving people who prefer milder food, reduce or omit the jalapeno and cayenne pepper. If you love spice, include both for a bold kick!

Flavor Accent: Balsamic vinegar adds a rich, sweet tang that balances the sharp bite of the peppers and black pepper remarkably well.\
